Challenge Mike – Pie and Chips

In this video I’ve attempted to make a gluten free steak pie but by the time I was finished we were starving so I cheated with the chips and used some McCain oven chips that don’t have flour on them. (I will do another video of making home made chips).

This is the recipe I followed:
Pastry
500g / 1 lb, 2oz gluten free plain flour
165g / 6oz butter
Secret ingredient: 85g / 3oz lard
Pinch of salt
8-9 tablespoons water

Filling
800g (28oz) braising steak chopped into bite sized pieces
Sea salt & freshly ground black pepper
½ tablespoon chopped thyme
2 tablespoons oil
2-3 tablespoons gluten free flour
150ml (5 fl oz) gluten free beer

Glaze
1 medium free range egg yolk, beaten

Making the Pastry
Sift flour into mixing bowl
Rub in butter until breadcrumbs
Stir in water and mix to a dough
Mix until it stops cracking
Shape into a ball, wrap in clingfilm
Chill for 30 minutes in fridge

Cooking the Beef Filling
Preheat oven to 200c/Gas mark 6
Grease a large pie dish
Season beef with salt and pepper
Heat oil in a pan & fry until brown all over
Add the thyme
Sprinkle flour over meat
Pour on beer / stock
Bring to the boil
Season with salt & pepper
The sauce should be fairly thick
Leave to cool

Roll Out the Pastry
Roll out 2/3 of pastry between 2 sheets of non stick baking paper
Cut out a round to line the base and sides
Line dish with pastry
Spoon in meat and sauce

Roll out remaining pastry and use to cover
Press edges down firmly
Crimp edges
Cut hole in top

Brush with egg yolk
Bake in oven for 45 minutes until golden brown
